These delicious and healthy energy balls are perfect for a quick snack or a nutritious treat, combining dates, nuts, and cocoa for a satisfying bite.
Ingredients
Dried Fruits

Medjool dates
(about 12, pitted)
1/2
cup
smooth almond butter
1/2
cup
whole pecans

teaspoon
pure vanilla extract

tablespoon
chia seeds

tablespoons
unsweetened cocoa powder

teaspoon
salt
Instructions
Rehydrate dates in hot water for 10 minutes, then drain.
Add dates, almond butter, pecans, vanilla, chia seeds, cocoa, and salt to a food processor and process until a thick batter forms.
If the batter is crumbly, add 1 tablespoon water and process until it comes together.
Refrigerate the batter for 1 hour until firm enough to roll.
Form into 20 balls and refrigerate.
Notes
Chill the batter well for easier rolling.
