These delicious and healthy energy balls are perfect for a quick snack or a nutritious treat, combining dates, nuts, and cocoa for a satisfying bite.

Ingredients

Dried Fruits

  • 1 cup Medjool dates (about 12, pitted)
  • 1/2 cup smooth almond butter
  • 1/2 cup whole pecans
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon chia seeds
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt

Instructions 

  • Rehydrate dates in hot water for 10 minutes, then drain.
  • Add dates, almond butter, pecans, vanilla, chia seeds, cocoa, and salt to a food processor and process until a thick batter forms.
  • If the batter is crumbly, add 1 tablespoon water and process until it comes together.
  • Refrigerate the batter for 1 hour until firm enough to roll.
  • Form into 20 balls and refrigerate.

Notes

Chill the batter well for easier rolling.
