Instructions
Sear chicken breasts in 1.5 tablespoons of olive oil until cooked through, then set aside.
In the same pan, sauté shallots and sun-dried tomatoes in butter until fragrant.
Add garlic, tomato paste, and spices; cook briefly. Pour in heavy cream and milk, simmer until slightly thickened.
Stir in cooked pasta, spinach, parmesan, cherry tomatoes, and sliced chicken. Season with salt and pepper to taste.
Notes
For extra flavor, garnish with additional parmesan and fresh parsley before serving.
