Instructions
Cook the penne pasta according to package instructions, then drain and set aside.
Season chicken with ½ teaspoon salt, Italian seasoning, and black pepper. Cook in olive oil until golden and cooked through, then set aside.
In the same skillet, melt butter, then sauté onion, garlic, tomato paste, and sun-dried tomatoes for 2-3 minutes.
Add spinach and cook until wilted, then pour in chicken broth to deglaze. Stir in heavy cream and simmer until thickened, about 3-5 minutes.
Mix in cooked pasta, chicken, and Parmesan cheese until evenly coated. Serve hot.
Notes
For a lighter version, use half-and-half instead of heavy cream.
