A creamy, flavorful pasta dish with tender chicken, sun-dried tomatoes, and spinach, perfect for a satisfying meal.

Ingredients

Pasta

  • 8 ounces penne pasta (cooked and drained)

Chicken

  • 1 pound boneless skinless chicken breast (cut into ¾ inch pieces)

Seasonings

  • 0.5 teaspoon salt (divided)
  • 0.5 teaspoon salt (for seasoning the chicken)
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon dried Italian seasoning blend

Other ingredients

  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 0.5 cup diced yellow onion
  • 1 tablespoon minced fresh garlic
  • 2 tablespoons tomato paste
  • 8.5 ounces julienne sliced sun-dried tomatoes packed in herb oil (oils drained (approximately 1 cup))
  • 2 ounces fresh baby spinach (lightly packed (approximately 2 cups))
  • 0.5 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese

Instructions 

  • Cook the penne pasta according to package instructions, then drain and set aside.
  • Season chicken with ½ teaspoon salt, Italian seasoning, and black pepper. Cook in olive oil until golden and cooked through, then set aside.
  • In the same skillet, melt butter, then sauté onion, garlic, tomato paste, and sun-dried tomatoes for 2-3 minutes.
  • Add spinach and cook until wilted, then pour in chicken broth to deglaze. Stir in heavy cream and simmer until thickened, about 3-5 minutes.
  • Mix in cooked pasta, chicken, and Parmesan cheese until evenly coated. Serve hot.

Notes

For a lighter version, use half-and-half instead of heavy cream.
