Instructions
Saute the vegetables in oil for 4-5 minutes.
Add herbs, chicken, broth, bring to boil, then simmer for 15 minutes.
Remove chicken, shred with forks, and return to soup. Simmer 1-2 minutes.
Remove herbs and bay leaf, stir in parsley, and serve garnished with parsley and pepper.
