Delight in these fluffy vanilla muffins, perfect for breakfast or a snack, topped with a sweet glaze.

Ingredients

Dry ingredients

  • 0.5 cup refined coconut oil (softened)
  • 0.5 cup sugar
  • 3 egg whites egg whites (at room temperature)
  • 1 tbsp vanilla extract
  • 1.5 cups flour
  • 2 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup milk
  • 0.33 cup powdered sugar
  • 1 tsp milk
  • 1 tsp vanilla bean paste

Instructions 

  • Preheat oven to 350°F (175°C). Line muffin tin and prepare batter.
  • Mix dry ingredients in a small bowl. Cream oil and sugar until fluffy. Add egg whites and vanilla.
  • Alternate adding dry ingredients and milk to the wet mixture, beating well. Fill muffin cups ¾ full.
  • Bake for 16-18 minutes until golden. Cool for 5 minutes, then remove from pan.
  • Mix powdered sugar, milk, and vanilla bean paste for glaze. Drizzle over cooled muffins.
