This homemade vanilla pudding is rich, creamy, and easy to make from scratch, perfect for a comforting dessert.

Ingredients

Eggs

  • 4 large egg yolks
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar, packed ((or substitute granulated sugar))
  • 0.5 teaspoon kosher salt
  • 3 tablespoons cornstarch
  • 1 cup whole milk, cold
  • 2 cups whole milk, warm
  • 1 vanilla bean vanilla bean (or vanilla extract)
  • 2 tablespoons butter

Instructions 

  • In a saucepan, combine egg yolks, sugars, salt, and cornstarch.
  • Whisk in cold milk until smooth, then heat remaining milk with vanilla bean seeds and pod until bubbling.
  • Temper hot milk into egg mixture, then cook over medium heat, whisking until thickened.
  • Remove from heat, stir in butter and vanilla extract if using a vanilla bean.
  • Cover with plastic wrap, chill for at least 2 hours, then whisk before serving.

Notes

For an ultra-smooth texture, strain the pudding before chilling.
