  • 1 cup granulated sugar (sweetens the pudding)
  • 3 tablespoons cornstarch (thickening agent)
  • 2 cups 2% milk or higher (or whole milk for richer flavor)
  • 2 large egg yolks (adds richness and helps thicken)
  • 1 tablespoon salted butter (for a luscious finish)
  • 2 teaspoons pure vanilla extract (for best flavor)

Instructions 

  • Whisk sugar and cornstarch in a saucepan until combined.
  • Gradually add milk, stirring constantly until smooth.
  • Cook over medium heat until thickened and bubbling, about 5-7 minutes.
  • Temper egg yolks with hot mixture, then return to saucepan and cook 2-3 minutes.
  • Remove from heat, stir in butter and vanilla, then chill before serving.

Notes

Cover with plastic wrap pressed directly on the surface to prevent a skin from forming.
