1can (15 oz)light coconut milk(reserve 2 tbsp for topping)
1can (15 oz)pumpkin puree
0.5teaspoonsalt(plus more to taste)

Instructions
Saute onion, carrot, and garlic in olive oil until translucent, about 3-5 minutes. Add ginger, curry powder, and cayenne; stir for 30 seconds.
Add water/broth, coconut milk, lentils, and pumpkin puree. Season with salt and pepper. Bring to boil, then simmer for 30 minutes until lentils are tender.
Adjust seasonings if needed. Serve hot, drizzled with coconut milk and garnished with cilantro, yogurt, and salsa. Serve with bread for dipping.
