A hearty and flavorful vegan soup combining pumpkin, lentils, and warming spices, perfect for a cozy meal.

Ingredients

Oil

  • 0.5 tablespoon olive oil

Vegetables

  • 1 diced white onion
  • 1 sliced large carrot
  • 3 cloves garlic (minced)

Spices and liquids

  • 0.5 tablespoon fresh grated ginger
  • 1 tablespoon mild yellow curry powder
  • 0.25 teaspoon cayenne (optional)
  • 3 cups water or vegetarian broth
  • 1 cup green or brown lentils (sorted and rinsed)
  • 1 can (15 oz) light coconut milk (reserve 2 tbsp for topping)
  • 1 can (15 oz) pumpkin puree
  • 0.5 teaspoon salt (plus more to taste)

Garnishes and sides

  • extra fresh diced cilantro
  • Greek yogurt
  • salsa (optional)
  • pita or naan bread (for dipping)

Instructions 

  • Saute onion, carrot, and garlic in olive oil until translucent, about 3-5 minutes. Add ginger, curry powder, and cayenne; stir for 30 seconds.
  • Add water/broth, coconut milk, lentils, and pumpkin puree. Season with salt and pepper. Bring to boil, then simmer for 30 minutes until lentils are tender.
  • Adjust seasonings if needed. Serve hot, drizzled with coconut milk and garnished with cilantro, yogurt, and salsa. Serve with bread for dipping.
