A hearty and comforting plant-based shepherd’s pie made with lentils and vegetables, topped with creamy mashed potatoes.

Instructions
Cook lentils in vegetable broth until tender, about 20 minutes.
Meanwhile, sauté diced onion, carrots, celery, and garlic in olive oil until softened.
Add cooked lentils, tomato paste, soy sauce, thyme, rosemary, bay leaf, salt, and pepper to the vegetables. Simmer for 10 minutes.
Boil potatoes until tender, then mash with plant-based butter, milk, salt, pepper, and nutmeg.
Spread lentil mixture in a baking dish, top with mashed potatoes, and bake at 375°F (190°C) for 20 minutes until golden.
