A hearty and flavorful vegan curry featuring sweet potatoes, chickpeas, and aromatic spices, perfect for a comforting meal.

Ingredients

Vegetables

  • 1 medium to large sweet potato (cut into 1" pieces)
  • 1 small onion (diced)
  • 1 14 ounce can chickpeas (drained)
  • 1 28 ounce can diced tomatoes (with juices)
  • 0.5 cup red lentils
  • 4 cloves garlic (minced)
  • 2 tablespoons curry powder
  • 0.5 tablespoon ground cumin
  • 1 tablespoon garam masala
  • 2 cups vegetable broth
  • to taste Salt & pepper
  • optional Chopped cilantro
  • optional Naan bread

Instructions 

  • Combine all ingredients in a slow cooker, season with salt and pepper to taste.
  • Cook on low for 6-8 hours until sweet potatoes are tender and flavors meld.
  • Serve topped with chopped cilantro and naan bread if desired.
