White Chocolate Cranberry Cookies

Delight in these soft, chewy cookies loaded with white chocolate and cranberries, perfect for any occasion.

Ingredients

Dough

  • 1 ⅔ cups all purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter (softened to cool room temp)
  • ½ cup packed light brown sugar (make sure it is fresh and soft)
  • ¼ cup granulated sugar
  • 1 large egg
  • ¾ teaspoon pure vanilla extract
  • ¼ teaspoon almond extract
  • ¾ cup white chocolate chips or chopped white chocolate bar (plus more for topping, if desired)
  • cup dried sweetened cranberries (plus more for topping, if desired)

Instructions 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Mix flour, baking soda, and salt in a small bowl. Beat butter and sugars until creamy, then add egg and extracts.
  • Gradually add dry ingredients to wet, then fold in white chocolate chips and cranberries.
  • Scoop 2-tablespoon portions onto baking sheets, spacing apart. Bake for 9-12 minutes until edges are golden.
  • Remove from oven, press additional chips or cranberries if desired, then cool on wire racks.

Notes

For softer cookies, slightly underbake and let cool on the baking sheet.
