Ingredients

Yeast and Dry Ingredients

  • 2.25 tsp dry active yeast (do not use rapid rise yeast)
  • 1 tsp sugar
  • 1.5 cups warm water (about 95-110°F)
  • 2 tbsp olive oil

Flour and Salt

  • 2 cups whole wheat flour
  • 1 3/4 cups white all-purpose flour (unbleached, extra for kneading)
  • 1 3/4 tsp salt

Herbs and Toppings

  • 1 tbsp Italian seasoning (or basil, oregano, thyme)
  • 1/2 cup olives (kalamata, green with pimentos, optional)
  • 1/2 cup parmesan cheese (grated, optional)
  • 1 tbsp fresh rosemary (chopped)
  • 1/4 tsp fresh cracked pepper (to taste)

Additional Oil and Seasoning

  • 2 tbsp extra virgin olive oil
  • 1 tbsp parmesan cheese (grated, for topping)
  • 1 tbsp fresh chopped rosemary

Instructions 

  • In a small bowl, dissolve yeast and sugar in warm water; wait 5 minutes until bubbling.
  • Mix whole wheat flour, all-purpose flour, salt, and herbs; add olive oil and gradually incorporate yeast mixture to form a slightly sticky dough.
  • Knead dough briefly on floured surface, shape into a ball, and let rise in a greased bowl covered with plastic wrap for 1.5-2 hours until doubled.
  • Preheat oven to 425°F (218°C), line baking sheet with parchment, press dough into rectangle, and let rest covered for 30 minutes.
  • Rub top with olive oil, dimple with fingers, add toppings like herbs, olives, and cheese, then bake for 25 minutes until golden brown.

Notes

For best results, ensure dough is slightly sticky but manageable, and let it rise in a warm environment.
