Ingredients

Dough

  • 3 cups whole wheat flour
  • 1 cup warm water (110 F)
  • 2 ¼ tsp active dry yeast (7g)
  • 3 tbsp honey or maple syrup
  • 2 tbsp olive oil or melted butter
  • 1 ½ tsp salt
  • 1 tbsp vital wheat gluten (optional)

Instructions 

  • Mix warm water and honey, sprinkle yeast, and let sit 5-10 minutes until frothy.
  • Combine flour, salt, and vital wheat gluten; add yeast mixture and olive oil, stir to form dough.
  • Knead dough on floured surface for 8-10 minutes until smooth.
  • Let dough rise in greased bowl, covered, for 1-1.5 hours until doubled.
  • Punch down, shape into loaf, place in greased pan, and let rise 30-45 minutes.
  • Preheat oven to 375 F (190 C), bake for 30-35 minutes until golden, then cool before slicing.
