A flavorful and hearty chicken salad featuring wild rice, fresh lemon, grapes, and toasted almonds, perfect for a light lunch or picnic.

Ingredients

Wild Rice

  • 0.75 cup uncooked wild rice
  • 2.25 cups water
  • 1 teaspoon salt

Dressing

  • 0.67 cup mayonnaise
  • 0.67 cup milk (whole or lowfat)
  • 0.33 cup fresh lemon juice (from 2 to 3 lemons)
  • 0.5 cup chopped green onions (white and pale green parts)

Main Ingredients

  • 2.5 cups cooked cubed chicken (or turkey)
  • 1 can sliced water chestnuts (8 oz., drained and rinsed)
  • to taste Kosher salt and pepper
  • 0.5 pound seedless red or green grapes (halved)
  • 1 cup slivered almonds (toasted)

Instructions 

  • Rinse wild rice, cook in water with salt until tender, then drain and cool.
  • Whisk mayonnaise, milk, lemon juice, and green onions; add cooked rice, chicken, water chestnuts, salt, and pepper, then refrigerate for 2-4 hours.
  • Before serving, fold in grapes and toasted almonds, toss gently, then serve on lettuce.

Notes

Chill the salad well before serving for best flavor.
