Instructions
Preheat oven to 400°F (200°C). Line a baking sheet.
Rub chicken with olive oil and seasonings. Toss potatoes with olive oil, garlic, Parmesan, salt, and pepper.
Arrange chicken on one side of the sheet and potatoes on the other. Roast for 25–30 minutes, flipping potatoes halfway.
Ensure chicken reaches 165°F (74°C). Sprinkle Parmesan and broil for a golden crust in last 5 minutes.
Remove from oven, garnish with parsley, and serve hot.
Notes
For extra flavor, marinate the chicken beforehand or add a squeeze of lemon before serving.
