A quick and flavorful one-pan dinner featuring tender chicken breasts and crispy garlic Parmesan potatoes, perfect for weeknights.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts (or thighs for extra juiciness)
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil

Potatoes

  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 0.33 cup grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet.
  • Rub chicken with olive oil and seasonings. Toss potatoes with olive oil, garlic, Parmesan, salt, and pepper.
  • Arrange chicken on one side of the sheet and potatoes on the other. Roast for 25–30 minutes, flipping potatoes halfway.
  • Ensure chicken reaches 165°F (74°C). Sprinkle Parmesan and broil for a golden crust in last 5 minutes.
  • Remove from oven, garnish with parsley, and serve hot.

Notes

For extra flavor, marinate the chicken beforehand or add a squeeze of lemon before serving.
