Ingredients

Protein

  • 2 pounds boneless chicken (breast or thighs), sliced thin
  • 2 tablespoons olive oil

Vegetables

  • 1 large onion, sliced
  • 2 bell peppers bell peppers (any color), sliced

Aromatics & Spices

  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 0.25 teaspoon cayenne pepper

Cheese

  • 8 oz provolone cheese, sliced or shredded

Instructions 

  • Season chicken with salt, pepper, paprika, garlic powder, and cayenne; let sit 15 minutes.
  • Heat 1 tablespoon oil in skillet; cook chicken 5-6 minutes until browned.
  • Remove chicken; sauté onions and peppers 4-5 minutes.
  • Add garlic; cook 30 seconds. Return chicken; toss to combine.
  • Top with cheese, cover, and rest 2-3 minutes until melted.
