Ingredients

Muffin Ingredients

  • 1 cup grated zucchini
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions 

  • Preheat oven to 350°F and line a muffin tin.
  • Mix zucchini, pumpkin, eggs, maple syrup, coconut oil, and vanilla in a bowl.
  • Add flour, baking soda, cinnamon, nutmeg, and salt; stir until combined.
  • Divide batter into muffin cups, filling each 3/4 full.
  • Bake for 20-25 minutes until a toothpick comes out clean.
  • Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, add chocolate chips or nuts to the batter.
