Instructions 

  • Roast butternut squash and chickpeas at 450°F for 22 minutes, tossing with 1.5 tbsp olive oil and seasonings.
  • Cook farro in boiling salted water for 30 minutes until tender, then drain and fluff.
  • In the last 8-10 minutes of roasting, add kale to the sheet and roast until crisp tender.
  • Sauté shallots in 2.5–3 tbsp olive oil until deep golden and crispy, then remove and season with salt.
  • Fry cheese cubes in remaining olive oil until golden, about 1 minute per side.
  • Whisk dressing ingredients, adjust with lemon juice or honey, then toss all components in a large bowl and serve.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
