  • 1 pound short-cut pasta (rotini, fusilli, penne, or farfalle)

Chicken

  • 1 pound cooked chicken, diced

Vegetables and cheese

  • 2 cups cherry tomatoes, halved
  • 1 orange orange bell pepper, diced
  • 1/2 red onion red onion, thinly sliced
  • 2 cups arugula, roughly chopped
  • 1/4 cup grated parmesan cheese

Dressing

  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced or grated
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt (plus more as needed)
  • a pinch black pepper black pepper, plus more as needed

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and rinse with cold water. Shake off excess water.
  • Whisk together mayonnaise, Greek yogurt, lemon juice, olive oil, Dijon mustard, garlic, basil, parsley, salt, and pepper to make the dressing.
  • Combine cooked pasta, chicken, tomatoes, bell pepper, onion, arugula, and parmesan in a large bowl. Toss with dressing.
  • Adjust seasoning with additional salt, pepper, or olive oil if needed. Serve immediately or refrigerate up to 5 days.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
