  • 2 tablespoons cooking oil (vegetable or canola)
  • 1 teaspoon sesame oil
  • to taste Chili flakes or fresh chopped chili
  • 1 tablespoon oyster sauce, hoisin, or teriyaki sauce (optional)

Instructions 

  • Dice chicken, chop vegetables, and beat eggs; set aside.
  • Cook chicken in hot oil until golden, then remove. Scramble eggs in same pan, then set aside.
  • Sauté garlic and ginger, add vegetables, cook until tender. Add rice, soy sauce, and optional sauces, stirring well.
  • Return chicken and eggs to pan, stir to combine and heat through. Garnish with green onions.

Notes

Use day-old rice for best texture and flavor.
