  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup tomato sauce or salsa
  • 1/2 cup water
  • 1 cup long-grain white or brown rice
  • 2 cups water or chicken broth
  • 1 unit juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon butter or olive oil
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (grilled or canned, drained)
  • 1 cup shredded lettuce (romaine or iceberg)
  • 1 unit avocado, diced or sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup sour cream
  • to taste Salt and pepper
  • to taste Red pepper flakes (optional)
  • to taste Salt
  • 1 unit jalapeño, sliced (optional)

Garnish and serving

  • as needed Fresh cilantro leaves

Instructions 

  • Cook rice in boiling water or broth until tender, then fluff and stir in lime juice, cilantro, and butter. Keep warm.
  • In a skillet, sauté onion and garlic in olive oil until softened. Add ground beef, cook until browned, then stir in taco seasoning, tomato sauce, and water. Simmer until thickened.
  • Assemble bowls by layering rice, seasoned beef, and toppings: beans, corn, lettuce, avocado, tomatoes, onion, and cheese. Top with sour cream, hot sauce, cilantro, and jalapeños. Serve with lime wedges.
