  • 1/2 cup light brown sugar

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons milk (adjust for desired consistency)

Instructions 

  • Preheat oven to 425°F (220°C). Line muffin tins with liners.
  • Make streusel: Mix flour, sugar, cinnamon, salt; stir in melted butter until clumpy. Chill.
  • Combine dry ingredients; whisk eggs and sugars, then add oil, pumpkin, vanilla, milk. Mix wet and dry just until combined.
  • Fill muffin liners halfway, add streusel topping, press down gently. Bake at 425°F for 5 min, then reduce to 350°F and bake 12-15 min.
  • Cool muffins 10 min, then drizzle with glaze made from powdered sugar, maple syrup, cinnamon, vanilla, and milk.

Notes

For best results, do not overmix the batter to keep muffins light and tender.
