A delicious grilled sandwich combining roasted butternut squash, shredded chicken, spinach, and melted mozzarella for a comforting meal.

Ingredients

Vegetables

  • 30 oz butternut squash (about 30oz/850g)
  • 2 TBS olive oil
  • 2 cloves garlic
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp curry
  • 1/4 tsp cumin
  • 1 panini roll panini roll (or any sliced bread)
  • 3 TBS butternut squash spread
  • 1/3 to 1/2 cup cooked shredded chicken (enough to cover one side of the sandwich)
  • 1/4 cup baby spinach (about a pinch)
  • 1/4 cup shredded mozzarella (for a thin layer of cheese)

Instructions 

  • Preheat oven to 375°F (190°C). Roast and prepare the butternut squash, then blend with spread ingredients.
  • Heat the panini press or grill pan. Spread squash spread on bread, layer chicken, spinach, and cheese, then assemble the sandwich.
  • Grill on the panini press for 6-7 minutes or on a grill pan for 3-4 minutes per side until cheese melts.

Notes

Use a heavy pan or press to ensure even grilling and melting.
